Coffee Beans…& Bacon?
First, these are cheater beans. No soaking beans over night, or baking for hours.
YAY.
Second, these beans are good anytime. For breakfast with eggs and toast, for brunch when you have a crowd in, for lunch with some fresh baked bread, or for supper with baked ham.
But you know when these are best? When you’re hungover baby, because it has all the food groups you require, bacon, maple syrup and coffee! So, hair of the dog and all that, and these beans!
Recipe
6 strips of bacon cut in 2” pieces
1 large red onion, sliced very thin
2 cans 19oz dark brown beans ( I like Bush’s)
2 tbsp finely ground coffee
1 tsp dry mustard
½ cup of liquid gold (aka Maple Syrup)
Instructions
In a large frying pan, cook bacon over moderate heat until lightly browned. Remove and set aside.
In the same pan, cook onion until soft.
Line the bottom of a 8 cup casserole with half of the bacon. Cover with a thin layer of onions, then spread about a 1” layer of the beans on top. Repeat the onion and bean layering twice more.
Sprinkle finely ground coffee on top. Stir mustard into maple syrup to dissolve, and pour all over. Top with remaining bacon.
Cover and bake in a 350F oven for 30 minutes. Remove cover and continue to bake about 15 minutes longer until beans are bubbling and have thickened.
Serves 4-6

And for the Hair of the Dog to go with the Beans...No contest…a nice COLD BEER…Stay away from anything too dark or flavoured as there are so many flavours going on in them there beans…

OK so I’ve actually had these baked beans courtesy of Candace and let me just say they are a-m-a-z-i-n-g Since having these I never had gone back to the traditional way of making them simply because everyone prefers these. The only thing left for me to try is the pairing them with a Stella.
