Apple Bacon Coleslaw…

I LOVE ME SOME SLAW

Good Slaw that is…Because if you love slaw…you know there is Good Slaw and REALLY bad slaw…This is by far one of my fave slaws…

Apple Bacon Coleslaw…

1/4 cup cider vinegar

1 cup mayonnaise

1/3 cup honey

2 teaspoons kosher salt

1/4 cup pulp free orange juice

 juice from 1/2 fresh lemon

1 teaspoon ground black pepper

1 sm Fennel shredded

1 medium cabbage, cored,  shredded

1/2 pack of bacon fried crispy then broken up into small pieces

1 bunch scallions, thinly slice1/2 cup finely minced parsley leaves, optional

4 firm apples, peeled, cored and shredded

Mix everything in a large bowl and let sit in the fridge over night…This is always better if you let it sit for a day or so…really lets the flavours out…

To me there is nothing better with slaw than a cold beer…and this is one of my summer faves…

1664 Blanc is a flavoured Wheat Beer…it has a light citrus taste…not too over powering.

This beer is best served in a glass …pour 1/4 of the beer into glass then give the bottle a good swirl…as too incorporate the sediment in the bottom of the bottle for the full flavour…

    I just finished making this slaw and we are going to have BBQ ribs wihich will be cooked in the crockpot all day. I just know it is going to be fabulous darlin’ and I love your aspirations! Always reach for the stars, you just never know where you might land……

    Could you please clarify if the orange juice is 1/4 CUP. And is the lemon juice
    1/2 lemon or 1/2 cup. Thanks. Can’t wait to try this.

      Hello..Yes quarter cup of Oj and juice from 1/2 a lemon…Thanks for pointing that out, it was not very clear…I usually drink while I cook lol ooops..I fixed it in the recipe so it should be clearer…

    I just prepared this for dinner tonight. And of course I had to sample it – OMG – love it. Can’t wait to taste it after it has sat for 8 hours!!! Only change I did – was used 1/2 Low Fat Greek Yogurt in place of 1/2 cup of the mayo (trying to eat healthier, and finding using the LF Greek Yogurt has been a great exchange). Love the addition of the fennell! Going to grill some burgers, out on a snowy deck – think spring with this meal!

    This stuff is fabulous! I followed the recipe to a tee – didn’t change a thing. By far the best slaw I’ve ever eaten. Loved the dressing. It would be great in regular cabbage slaw, as well. This is a keeper, for sure. Thanks, Dee!

    I don’t even like cole slaw most of the time but this sounded good to my pregnant belly so I made it. I substituted sour cream for the mayo and OMG this was AMAZING. I ate the whole thing in a day. So so good, definitely worth making!!

      I used granny smith becuase I wanted the tartness from them..but any apples will work…

    I would like to take this to a party I’m attending in a week. How many days in advance can I make this? I was worried that too long in advance and the cabbage would not be as crisp and that the apples might start to turn brown. This just looks and sounds so yummy, I can’t wait to try it.

      This is the perfect thing to take to a party…But because of the apples turning brown I have only ever made it one day before and it is fine …I really would worry about doing it much before that. Have fun at your party…Cheers

    Can’t wait to try this delicious sounding slaw! One question-I really don’t like the taste of licorice and have never eaten fennel. Do you think it would be okay to leave it out, or can you suggest something to substitute ?

      I think you could just leave the fennel out and it would be fine ..just use more cabbage..Enjoy Cheers

    Just made this . It is just the best coleslaw ever!! I used fresh Florida cabbage, honey, oranges, and lemons. I have several favorite coleslaws, and this is now at the top. The apples and fennel are not overwhelming, they ad an extra subtle flavor- I followed the recipe exactly, but it is even good without the mayo. My husband doesn’t care for mayo, so filled a bowl for him before adding the mayo to the rest- and he gave it his top rating.
